The Unknown Flavor is the final quest for Remy, at Friendship Level 10, where you'll need to track down some rare ingredients to make the most scrumptious of desserts - Ice Cream.

The Unknown Flavor Walkthrough
Upon reaching Friendship Level 10, speak to Remy who will begin to remember a special dessert he made once. Go and speak to Merlin for some additional info about the recipe. He'll tell you to grab a recipe note from his library in his home, so go there and check the bookshelves at the back.

You'll need to collect 3 Purified Night Shards for the recipe, which can be made at a Crafting Station with the recipe in the image below, 5 Night Shards and 1 Dream Shard each.
The next objective is to find someone to turn the Purified Night Shards into powder, which is WALL-E. Speak to WALL-E to get the Purified Night Shard Powder, then head to a Crafting Station and create Ice Slush with the Powder and 15 Snowballs.
Take the Ice Slush to Remy and Slush Ice will become a permanent ingredient for purchase in Chez Remy. He will also give you a recipe for Vanilla Ice Cream, so use it in your Inventory to unlock it and you'll be tasked with making using the following ingredients:
- Slush Ice - Available for purchase in Chez Remy
- Milk- Available for purchase in Chez Remy
- Sugarcane- Seeds/Sugarcane are available for purchase at Goofy's Stall on Dazzle Beach
- Vanilla - Available in Sunlit Plateau
With those ingredients collected, head to a Cooking Station and make Vanilla Ice Cream. Then take it to Remy to unlock the "Best Chef" Shelf and conclude the quest at the same time!
