The Best Roasted Sweet Potatoes Recipe

Crispy roasted sweet potatoes with caramelized edges and soft pillowy inside are here! We love this recipe (and you should too!) because, with only five ingredients and 30 minutes, you’ll have a healthy and easy addition to any meal. They pair nicely aside any fall meal, can be blended into soups, thrown into salads like this Vegan Roasted Sweet Potato Salad, or devoured one by one. Picky eaters will rejoice, too – this roasted sweet potato recipe has a subtle sweetness that complements savory hints of garlic for the perfect, well-rounded, and never overpowering flavor. If you want to spice it up, try Honey Roasted Sweet Potatoes with Labneh, which are also deliciously oven-roasted.

Is Roasted Sweet Potato Healthy?

Yes! We should all be eating more roasted sweet potatoes so save this recipe! In fact, they are a little more nutritious than white potatoes (we still love you Roasted Garlic Mashed Potatoes!), providing 400% of your vitamin A in a single sweet potato! Additionally, roasted sweet potatoes are a great source of fiber, plus vitamins B6. When roasted, oven baked sweet potatoes are a healthier, savory counterpart to the usual marshmallow topping in a Healthy Sweet Potato Casserole around the holidays. Add them to your favorite easy lunch bowl, like this hearty Quinoa Bowl, or bulk up your morning breakfast like in this Breakfast Taco recipe. Toss them into Chickpea Salad for a plant-based meal or dip the roasted sweet potato cubes into easy Classic Creamy Hummus for a fall treat. We also love to enjoy them by themselves as a midday snack!

Should Sweet Potatoes Be Soaked Before Roasting?

In other words… do sweet potatoes need parboiling before roasting? Absolutely not. While many might choose to parboil the sweet potatoes before cooking for a shorter cooking time, we advise against it. Roasting sweet potatoes bring out their caramelized flavor yet leave the inside soft and custardy. If you boil them before, it’s possible that you could overcook them or remove some of the starch which in turn won’t allow for an even crispy outside and soft inside. Trust us, once you try this recipe for roast sweet potatoes (bonus, it’s under 30 minutes!), you’ll never turn to another recipe again.

What Temperature Should I Bake My Sweet Potatoes?

For roasted sweet potatoes in the oven, we use a temperature of 425°F. Cooking the roast sweet potatoes for a short amount of time, here only 20 minutes, at a high temperature allows for the perfect roast. Since oven roasted sweet potatoes are naturally sweet, they’ll caramelize on the corners of the pan, resulting in delectable golden brown bite-size pieces. Make sure to spread your sweet potatoes out on the pan to avoid overcrowding, which will end up steaming the potatoes instead of roasting them.

How To Roast Sweet Potatoes

We’ve got the best tips and tricks for perfectly crispy sweet potatoes every single time! This recipe for roasted sweet potatoes is a simple family favorite and takes less than 30 minutes. Follow these easy steps:

  1. Cut! When choosing your potato, look for evenly shaped, hard, and heavy sweet potatoes so trimming won’t be as complicated! We like to peel the skin, but you can leave it on if you prefer (and make sure to wash them really well)! Start by trimming the slides so you’ll have a flat surface to cut. With the flat side down, slice into 1 ½” rounds. From here, cut the rounds into even fourths.

  2. Season: Keep it simple with salt, pepper, and garlic, OR make them you’re own! Add a sprinkling of cumin, za'atar, or even smoked paprika!

  3. Bake: Make sure to keep your eyes on the roast sweet potatoes and turn halfway through if needed so they don’t burn!

FAQs

Why are my roasted sweet potatoes not crispy? ›

I've found that sweet potatoes really need space for a truly roasted, crisped-edge result. Aim for about one inch of space between pieces. This leads to good, dry, hot airflow that will let the potato pieces' moisture evaporate while letting them dry and crisp up more.

Why do you need to soak sweet potatoes before cooking? ›

Some recipes for homemade sweet potato fries ask you to soak the fries before cooking. The theory is that soaking draws out starch from inside the potatoes, helping them crisp up.

Why are my roasted sweet potatoes soggy? ›

Recipe FAQ's

The main reasons for soggy sweet potato wedges are: overcrowding the baking sheet, not tossing in enough oil, having too thick sized wedges, and not roasting at a high enough heat.

What is the best temperature for sweet potatoes? ›

Sweet potatoes are a warm-season, frost-sensitive crop that produces best when daily maximum air temperatures are between 85° and 95°F. Temperatures over 100°F are not harmful so long as the plants are adequately irrigated and temperatures drop to below 80°F at night, although growth may be slow above 100°F.

Why does vinegar make potatoes crispy? ›

The acid in the vinegar can also help to slightly break down the surface of the potatoes, aiding in the development of a crispier texture during frying. Additionally, the vinegar can contribute to a golden-brown color on the exterior of the fries.

Why are my sweet potatoes still hard after baking? ›

If the potato is still firm when squeezed, that means it needs to cook more. Baked sweet potatoes can be stored in an airtight container in the refrigerator for up to 5 days. Reheat for 2 minutes in the microwave, at 400°F in the air fryer for 5 minutes, or at 400°F in the oven for 10 minutes.

What happens if you don't soak potatoes? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

Should you rinse sweet potatoes before cooking? ›

They're dirty! Washing the sweet potatoes not only eliminates actual particles of dirt, but it also introduces some moisture to the skin, which prevents it from turning tough or leathery in the high heat of the oven.

Is it better to peel sweet potatoes before or after boiling? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Can you overbake a sweet potato? ›

Unfortunately, yes! If your sweet potatoes cook too long in the oven they can overbake and become dry. The insides will become mushy. Moving your sweet potato cubes around and checking them periodically can help avoid overcooking.

Why are roasted sweet potatoes so good? ›

The salt and pepper accent the potatoes' sweetness, creating a delectable sweet and savory flavor. I also love how the cubes puff up as they bake, becoming lightly crisp and caramelized on the outside and tender in the middle. And third, they're just so versatile.

Do sweet potatoes get softer the longer you cook them? ›

How Long to Roast Sweet Potatoes. This recipe produces perfectly roasted sweet potatoes after about 30 minutes in an oven preheated to 425 degrees F. If you like your roasted sweet potatoes very soft, you might want to cook them a tad longer.

Should you wrap sweet potatoes in foil before baking? ›

Wrapping the sweet potatoes in foil ensures that they don't dry out too quickly, and allows you to add aromatics if desired. Unwrapping the sweet potatoes and increasing the oven temperature produces charred, roasted flavors and caramelizes converted sugars.

Do sweet potatoes get sweeter the longer you cook them? ›

You can control the amount of maltose produced when cooking sweet potatoes by varying the cooking time. The longer and slower you cook a sweet potato, the more maltose is formed and the sweeter it will taste.

How do you know when a sweet potato is fully cooked? ›

A good rule of thumb for whole baked sweet potatoes: 45 minutes to 1 hour at 400 degrees F; 1 hour to 1 hour 15 minutes at 350 degrees F; 1 and 1/2 hours at 325 degrees F. You'll know the sweet potatoes are done by piercing the center of the sweet potato with the tip of a sharp knife; the flesh should yield easily.

Why can't i get my roast potatoes crispy? ›

Preheat the fat. While the potatoes parboil, add the oil or butter to the roasting pan, transfer it to the warm oven, and heat it for about 5 minutes before adding the potatoes. This allows the outside of the potatoes to crisp up nicely and not just absorb the cold fat when you put them in the oven.

Why are my oven roasted potatoes soggy? ›

Roasted potatoes can become soggy if the water content in the potato isn't fully cooked. Different potatoes have different water content percentages. Also, be mindful of the oil. Potatoes can react like sponges; too much oil can make your potatoes appear to be soggy.

Why are my roasted potatoes still hard? ›

If you roast them at too high a temperature, you risk browning the outsides before the insides are cooked through. Cook them for too long at a lower temp, though, and they may dry out (telltale signs: leathery, tough) on their way to Tender Town.

Why is my sweet potato soft? ›

How to tell if sweet potatoes have gone bad. If your sweet potato is soft in spots, smells rotten, or oozes a mysterious liquid, that potato should be discarded. Another sign that sweet potatoes have taken a turn for the worse is if they start growing stalky purplish sprouts.
