A juicy cut of pork or a whole chicken transforms into an instant meal simply by adding some hearty vegetables into the slow cooker at the perfect time. Follow our tips to nail delicious roast vegetables every time.

When should I add my vegetables to the slow cooker?

  • Tender vegetables such as zucchini and beans can be added to your dish in last ¾ - 1 hour of cooking when cooking on High, or 2 hours if cooking on Low.
  • Hard, starchy vegetables like potato and carrots are best added around 3 hours before the meal is done if cooking on High, and 4 hours on Low.

Can you put raw potatoes in the slow cooker?

Potatoes and all root vegetables are super slow cooker friendly. They can be added as part of a recipe or cooked on their own. Add root vegetables to your slow cooker dish at the beginning of your cooking time. If cooking a large joint cut of meat like a lamb shoulder, put your vegetables in the bottom of the pot and place the meat on top. For tender and evenly cooked vegetables, aim to cut them around the same size. Large 3-5cm pieces are our go to slow cooker size to avoid them turning into slush.

Can you put raw onions in the slow cooker?

Raw onion can go into your slow cooker no problem. Depending on the setting and cooking time however, the “raw” flavour can still remain due to the low temperature of the slow cooker. Sautéing the onion separately in a pan is an easy fix to this, before adding to the slow cooker with remaining ingredients.

Can you overcook vegetables in the slow cooker?

Slow cookers are designed to cook for extended periods of time, however if you are cooking a recipe on the wrong setting or time the may come out a little mushier than you would like.
