Ingredients You Will Need:
chopped veggies – I used celery, carrots, onions, and bell peppers. Other nice veggies for soup are potatoes, tomatoes, and green beans. Tons of fiber!
garlic
olive oil
seasonings – dried dill, basil, and parsley – TIP! Use fresh herbs and fresh parsley if they are in season. Rosemary, thyme, and bay leaf are also nice seasonings.
sea salt and pepper
water or chicken broth
chicken cut into bite-sized pieces – use breast meat or chicken thighs
freshspinach
How to Make This Soup:
Let’s get started on this chicken vegetable soup recipe! First, soften the vegetables in your soup pot along with the teaspoons of seasonings to get a nice flavor base.
Next, add the broth and chicken pieces, bring to a boil, reduce the heat and let the soup simmer.
Finally, add the spinach. All you need is the heat of the soup to soften the leafy greens. You could also add cooked noodles at this point if you feel like chicken noodle soup. I sometimes add cooked rice or orzo to this chicken veggie soup too. Yummy!
TIP! Squeeze in some fresh lemon juice and a sprinkle of freshly grated parmesan cheese to make this good old fashioned chicken vegetable soup restaurant-worthy.
Sprinkle in some dehydrated tomatoes for some instant tomato flavor to the vegetable soup.
Serve alongside some fresh bread and a salad with a nice balsamic dressing.
