How to Make Divinity Candy

  1. Line Baking Sheet: Line a large baking sheet with parchment or wax paper. Set aside.
  2. Whip Egg Whites: In the bowl of your stand mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff peaks form. Replace the whisk attachment for the paddle attachment and set aside.
  3. Cook Sugar, Corn Syrup & Water: In a medium, heavy bottom saucepan, combine the sugar, corn syrup and water over medium heat. Stir frequently until the mixture comes to a boil. Place a candy thermometer onto the side of the pot and allow to boil without stirring until the mixture reaches 260°F (hard ball stage). This will take 10-15 minutes. The mixture will still be light in color.
  4. Remove from Heat: Remove the mixture from the heat and turn the mixer back onto high speed. Slowly pour in the hot candy mixture in a steady stream until all is added.
  5. Add Vanilla & Mix: Add in the vanilla. Allow this to mix on high for 6-8 minutes, until the mixture is thick and just loses its glossiness and holds its shape. If the mixture doesn’t hold its shape when you pull the paddle attachment out, continue mixing until it does. You can also test this by scooping out a spoonful of the candy and placing it on the parchment paper. If it holds into a ball, it’s ready.
  6. Add Pecans: Using a wooden spoon or rubber spatula, hand-stir the chopped pecans into the mixture.
  7. Assemble: Drop by heaping tablespoonful onto the lined baking sheet. You can spray your spoon or scoop with nonstick spray to help the mixture come off the spoon easier. Alternatively, you can line an 8×8 pan with parchment, coat it with nonstick spray and spread into the pan using an offset spatula.
  8. Let Set: Allow the candy to set up completely before cutting and/or serving.

Tips for Success

  • Whip Egg Whites Until Stiff Peaks Form: Make sure your egg whites are fully whipped before making the sugar mixture for your candy. Beat them on high speed until stiff peaks form.
  • Dullness Indicates Doneness: Once the mixture loses it’s glossiness, check it immediately to see if it will hold its shape. If you overmix it, your candy will become dry. There is a sweet spot right after it stops being glossy.
  • Don’t Store in a Humid Area: This candy is best kept in a cool, dry place. It will become sticky if exposed to humidity.
  • Try Different Flavors: In addition to adding other nuts or dried fruits to your candy, you can also get creative with the extract you use. Almond, peppermint or coconut would be great!

How to Store Homemade Candy

Divinity candy should be stored, airtight, for up to 5 days. It’s best not to expose your candy to humidity. If you want to store your candy long-term, you can keep it in an airtight container in the freezer for up to a month.

    FAQs

Why is divinity candy so hard to make? ›

As sugar attracts water, any humidity or moisture in the air can affect how your divinity turns out. Divinity should be dry and set within two hours, but have patience. It may take a little longer.

What to do when divinity doesn't set up? ›

But if your divinity fails to harden, you can beat in two tablespoons of powdered sugar and allow the mixture to rest a few minutes; if the candy hardens too much, you can blend in hot water a tablespoon at a time until the perfect, fluffy consistency is reached.

Does humidity affect making divinity candy? ›

Consider this: divinity hates humidity. It's best to make divinity on a cool, dry day. If it's humid (over 50%) or rainy, the candy might end up with a more gooey, or grainy texture.

Can you make divinity when it's raining? ›

Just want to say to people who think you can't make divinity when it is humid, you can. When it's raining outside just reduce the amount of water in the recipe by about a tablespoon.

Why is my divinity not hardening? ›

If your divinity candy fails to harden, add 2 tablespoons of powdered sugar and beat again. Allow it to rest for about 15 minutes. This will absorb more moisture and will allow your sweet treat to harden. If you want your divinity candy to soften up a bit add hot water a tablespoon at a time and beat it again.

Why is my divinity chewy? ›

Corn Syrup – This is added to stop the sugar from crystalizing giving you a very smooth, chewy texture that's not grainy. Sugar – White granulated sugar is the best for this recipe, avoid brown sugar or it'll affect both the taste and look of the divinity.

What do I do if my divinity is too runny? ›

If it is too thin and does not set, try adding 1/2 tablespoon at a time of powdered sugar until it thickens.

Why is my divinity crumbly? ›

Beat until candy holds its shape, 5-6 minutes. (Do not overmix or candy will get stiff and crumbly.)

    Should I refrigerate divinity? ›

To store: Once the divinity candies are set, place them in an airtight container with parchment paper in between layers and store at room temperature for up to 1 week. You can also freeze them in airtight container for up to 2 months.

What is the barometric pressure for divinity? ›

(I just learned something new - apparently it is not humidity that will sink your divinity and some other airy or tempermental confections - it is barometric pressure, which should be at least 30 inches or higher.

How to make hard candy in high humidity? ›

Because excessive softness in candy results from high relative humidity, cook hard candies, such as nut brittle, to 2 degrees higher than the temperature your recipe calls for. The additional 2 degrees in cooking temperature will compensate for moisture in the air, so your candy will still have the correct texture.

What is divinity candy made of? ›

Divinity is a confection made from egg whites, corn syrup, and sugar. It's similar to nougat, fudge, or marshmallow. Tip: replace the sugar with brown sugar to create "sea foam." Other ingredients can be used to give the candy other tastes, like chopped dried fruit and chopped nuts.

    Does divinity freeze well? ›

Yes, divinity can be frozen for up to one year! Flash freeze the candy for a few hours or up to overnight, then transfer it to a freezer-safe container. Thaw at room temperature.

What is the best weather to make candy? ›

As a rule of thumb, only make candy when the weather is cool and dry, as the candy will cool faster and reduce the likelihood of crystal formation. Remember, high-humidity days can occur during the winter as well as summer.

Is Divinity Original Sin complicated? ›

This is one of the few games where normal difficulty is actually difficult, especially for new players. try lowering the difficulty until you understand mechanics and interactions better, when you feel that lower difficulties are too easy then you can think about raising it if you want.

How long did it take to make divinity original sin? ›

After six years of development, Larian Studios has released Divinity: Original Sin The Board Game—a distillation of its unique approach to fantasy RPGs into a box full of cardboard and plastic.

Why is my divinity not holding its shape? ›

Just like any other divinity, you must beat it long enough, so don't lose patience with the process! Mixture will thicken once you beat in enough cool air and it begins to look dull and not shiny. If you try to drop it when it is still too hot and thin, it will not hold its shape and it is not ready!
