Toastie Welsh Rarebit - James Martin Chef (2024)

Ingredients

  • 500g cheddar cheese, grated
  • 100ml bitter
  • 1 tsp Worcestershire sauce
  • 1 tsp English mustard
  • a few drops of Tabasco
  • 4 tbsp plain flour
  • 1 egg yolk
  • 2 x thick slices of bread
  • Small handful alexanders, for the BBQ
  • Salad of nettles, alexanders, sea radish and sorrels dressed with vinaigrette

  1. Preheat the pizza oven to hot and the BBQ until the coals are white.
  2. Barbeque the alexander stems until charred.
  3. Gently melt the cheese in a pan, add all the remaining ingredients.
  4. Put the bread onto a baking tray. Sit the alexanders on top and spoon over the rarebit. Put in the oven for 5 minutes.
  5. Serve the rarebit with a side of dressed salad.
