Shrimp Scampi Recipe with Zucchini Noodles

So if you follow me on Instagram, which if you don’t, you should… because… well.. I’m cool.. DUH!

But for real, if you follow me on Instagram you may have seen some pics from a recent family outing.

Last week Wednesday we went to our first baseball game with Cason.

I wasn’t sure how he would do. He’s two now but his attention span still isn’t super long.

Luckily we had some veteran baseball game parents who could show us “the ropes,” my brother and sister-in-law.

We ended up getting to the game about 30-45 minutes early and went down to watch the players warm upon the field. As we were standing there Cason’s eyes were just huge in awe and wonder. Baseballs…. big green field… tons of people… huge jumbotron. WHOA!!!

After about 10 minutes or so watching them warm up, the boys (2 nephews and little man), had had enough. It was time to go play.

So off we went to the HUGE 2-3 story playground.

I have to admit I was a little nervous. I mean I get scared to let him climb around at Chick-fil-A!

All the bigger kids pushing around, lots of places to get lost in the maze, what if he falls? Yeah … needless to say I had an eagle eye gaze on him the whole time he was in there. Luckily his older cousin was by his side the whole time watching out for him.

Post playground time we headed in to get some baseball grub and watch the game.

Cason and I shared some cheeseburger sliders but apparently that was not good enough for him. He decided to mosy on over to his Aunt and chow down on her nachos and then finish off the night with a little ice cream.

So… all in all I think Cason’s idea of a baseball game is playground fun and lots of good food! 🙂

Tips for Making This Zucchini Pasta Dish

As a way to make this dish a little healthier, I whipped out my spiralizer again.

If you guys don’t have one you, you totally need to get one. They are fun to use and a great EASY way to put more veggies in your diet.

This dish seriously took me by surprise, taste wise! I loved the zucchini noodles with all the scampi flavors and even added a little touch of butter to finish thesauce that ended up tying everything together and made it absolutely irresistible to eat!

I hope ya’ll get a chance to try it.

If you by chance don’t have a spiralizer, in order to create zucchini noodles you could use a peeler or a mandolin.

FAQs

Are zucchini noodles a good substitute for pasta? ›

Zucchini noodles (also known as zoodles) are a great low-carb or gluten free substitute for traditional wheat pasta. Zoodles can be made a few different ways using either a spiralizer, julienne peeler, or mandoline. They can also be prepared in multiple ways such as microwaved, sauteed, baked, boiled, or eaten raw.

How do you make non soggy zucchini noodles? ›

To avoid soggy and limp noodles, I recommend cooking for only 3-5 minutes (5 if you're cooking more than 1-2 spiralized zucchinis) and tossing frequently. You want a slightly al dente noodle.

Why do my zucchini noodles get watery? ›

Zucchini is nearly all water, so when you go to cook zucchini noodles it releases the water content of the vegetable. And if you overcook them, you'll end up with a watery, mushy pile of zoodles. Here are my favorite ways to cook zoodles on the stove, in the microwave or in the oven.

What can I use to thicken a scampi sauce? ›

Scampi sauce is meant to be fairly thin since it's largely butter-based. If you would like a thicker sauce, consider adding a slurry made with cornstarch or add some heavy cream. Cream will also make the sauce richer.

What's the difference between zucchini noodles and zoodles? ›

The biggest difference most people notice when they eat zucchini noodles is the texture. The texture of zoodles can vary based on how long they are cooked and how they are made. Lightly cooked zoodles will be crunchier than pasta and well-done zoodles will be softer.

Should you salt zucchini noodles before cooking? ›

Don't pre-salt your zucchini noodles.

First of all, one of the benefits of spiralizing is that it's SO quick (just spiralize, cook, and enjoy pasta in under 5 minutes!).

Are you supposed to boil zucchini noodles? ›

Don't! We like our regular pasta with a nice al dente bite, and the same goes for cooking zoodles! If you serve a warm sauce over the noodles, it will gently heat them through, so no actual cooking is necessary.

Why is my zucchini lasagna watery? ›

To avoid a watery lasagna, make sure to salt the zucchini slices and let them sit to draw out excess moisture, as mentioned in the recipe instructions. Pat them dry before layering in the lasagna. Also, be sure not to overcook the lasagna, as this can also contribute to excess moisture.

How do you know if zucchini noodles have gone bad? ›

Zucchini will feel mushy, the skin will be wrinkled, brown or damaged spots may appear on the outside. If you cut into the zucchini the flesh will be stringy and seeds will be much larger than average.

How do you thicken gluten-free sauce? ›

Sweet Rice Flour (Mochiko): Thickens gravy and sauces, and is used to make noodles. Tapioca Flour (Tapioca Starch): Use it to thicken sauces, as you would starch. Xanthan Gum: Include in gluten-free flour mix to help your baked goods stick together.

What is the sauce of shrimp scampi made of? ›

Shrimp scampi is made with a simple sauce of garlic, butter, and white wine. For me, I like to use a bit of extra virgin olive oil to support the butter, I find that it gives the dish good flavor and helps reduce the butter intake. As with all beloved classics, this recipe has many variations and additions.

How do you fix a broken scampi sauce? ›

The Fix Is Simple—Add Water Back.

Here's how fix a broken sauce: Add about ¼ cup of water to the pan and reheat the sauce to a vigorous simmer, whisking constantly. The bubbling action will help re-emulsify the butter and bring back that thick, glossy sauce.
