Basically, a simple and easy Indian deep-fried bread recipe prepared with rice flour, potatoes, and ajwain seeds. It is an extremely simple and basic alternative to wheat or plain flour-based puri which is known for its rich in carbohydrates. These spiced bread are loaded with spice and flavor and do not require an additional curry but taste great with any gravy-based paneer curries.

Puri or deep-fried bread recipes are extremely popular across India and are prepared and served for various reasons. These are typically made with wheat or plain flour which gives them a perfectly flaky and puffy texture to it. Yet it can be attempted with other types of flour too and rice flour-based chawal ki puri is one ideal alternative that makes it a complete meal.

I have been asked several times for poori or roti recipes using other types of flour except for wheat or maida flour. I have posted quite a few recipes along those lines and I am continuing the tradition with this post too. Basically, this poori is loaded or carbohydrates rich bread as it contains rice flour and potatoes. Adding the potatoes makes it a complete meal too. In other words, the side dish or curries are not necessary for this poori as it contains all the goodness in it. Perhaps such puri is ideal for kids who are typically fussy eaters. I personally prepare it for morning breakfast with any leftover curries, but you can make it for any day’s meal. Do try this and let me know if you liked it.

Firstly, I have used coarse-grained rice flour with this recipe which should help to knead and roll it. You may use fine rice flour, but you may not get the same texture and consistency, moreover, it may not puff while deep frying. Secondly, I have shown paneer bhurji gravy curry with this post which makes it an ideal combo for such poor’s. However, it is not mandatory and you can serve it with any spicy gravy-based curries. Lastly, if you do not prefer to have deep-fried poori’s, you may very well prepare simple rotis out of the same dough. Deep frying makes it tastier and also flaky in texture.

Ingredients

  • 1 potato, boiled
  • cup rice flour
  • ½ tsp garam masala
  • ¾ tsp chilli powder
  • ¼ tsp turmeric
  • 2 tsp kasuri methi
  • ¼ tsp ajwain
  • 1 tsp ginger garlic paste
  • ½ tsp salt
  • water, for kneading
  • oil, for frying

Instructions

  • firstly, in a large bowl grate 1 boiled potato. make sure to mash the potato very well.

  • add1½ cup rice flour, ½ tsp garam masala, ¾ tsp chilli powder and ¼ tsp turmeric.

  • also add2 tsp kasuri methi, ¼ tsp ajwain, 1 tsp ginger garlic paste and ½ tsp salt.

  • mix well making sure all the spices are well combined.

  • further, add warm water and start to knead the dough.

  • knead to a smooth and soft dough.

  • pinch a ball-sized dough and roll to a thick thickness dusting with rice flour.

  • deep fry in hot oil, keeping the flame on medium.

  • press gently until the poori puffs up.

  • flip over and fry both sides until it turns golden brown.

  • finally, enjoy crispy aloo rice poori with paneer bhurji gravy.

  • firstly, make sure to add water in batches as the potato will release water.
  • additionally, roll to a slightly thick thickness, else the poori will not puff up.
  • also, you can add coriander, and chilli to make the poori extra flavourful.
