lamb’s lettuce, lewiston, corn salad, mâche or weedy plant is a native plant to southern europe but widespread in grainfields all over europe and north america. you may wonder why the plant is called lamb’s lettuce and believe it is because it is eaten by sheep, however the actual reason is the shape of the leaves which supposedly look like the tongues of little lambs. the plant is dull green and velvety and grows in rosettes all year round with a main season from may to september. france and the netherlands are the main producers and many typical salads for both countries contain this type of salad leave as a base.

100 grams of lamb’s lettuce contains about 20 calories, 2 grams of protein, 3.5 grams of carbohydrates and 0.4 grams of fat. like all lettuces it is a very low calorie option that can be great if you want to lose weight, but should be paired with other foods to make it nutritional, substantial and satisfying. lamb’s lettuce further contains vitamin a and c and a reasonable amount of vitamin b6, iron and potassium.

the vitamin a in lamb’s lettuce helps prevent age-related decrease in eyesight, whilst vitamin c works as an immune booster to your system and helps lower blood pressure. the lettuce also contains a great dose of antioxidants which makes it great for good skin, hair and nails and slows down their aging process. iron further helps with healthy blood and good energy, vitamin b6 helps with the metabolism of vitamins, fats, carbohydrates and amino acids and has a positive effect on brain function and development. lastly, potassium is needed to regulate fluid balance, muscle contractions and signals going to and coming from your nerves.

lamb’s lettuce has a soft, nutty flavor and because of its shape it goes well with heavier salad dressings for example with a mix of yoghurt and mayonaise, as the leaves and rosettes hold on to sauces well. it goes well as a side salad with potato, radish and dill and a piece of wild caught salmon. or you can use it as the base of a bigger sized salad and add any vegetables, toppings and healthy protein source you like.

In 2016 heb ik mijn studie afgesloten met het masterdiploma in Coaching, Psychology of Change en Gezondheidspyschologie als onderdelen van de studie Sociale Psychologie aan de Rijksuniversiteit Groningen. Hierbij heb ik mij gespecialiseerd in de psychologische aspecten van gedrag en verandering.
Als hoofdtrainer ben ik in het bezit van twee trainersdiploma’s van de AALO en begeleid ik sinds een aantal jaar mensen met sporten en een gezonde voeding. Naast personal training, duo-training en small group training heb ik ook ervaring met grote groepen en teambuilding trainingen.
Mijn kennis over voeding betrek ik uit wetenschappelijke bronnen en ervaringen uit de praktijk. Wanneer ik advies geef, is dit gebaseerd op de voedingsrichtlijnen van erkende gezondheidsinstanties en altijd wetenschappelijk onderbouwd. Je zult echter merken dat ik je bij deze vorm van voedingscoaching meestal helemaal niet specifiek vertel wat je moet eten maar dat ik samen met jou ga kijken waar jij je het beste bij voelt.
