Slices of coffee bread are great with a cup of tea. This coffee bread is also great with a steaming hot cup of coffee. Who am I kidding, this bread is terrific no matter what you serve with it.

Flavored with strong coffee, this mildly sweet, caffeine tinged bread is easy to make. It’s a dense bread. A hearty snack, coffee bread makes a good midday meal.

I love coffee breaks. Whether at work or at home, it’s nice to sit down with a cup of coffee and just chill. Truly, the beverage of choice may vary – coffee, tea, hot chocolate, etc – but the act of taking a few minutes out of a busy schedule is the important thing.

Studies have been done and the results indicate that you will be more creative, productive and efficient if you take small breaks from your work. I don’t have the links to share here that provide the documentation for that statement, but you can Google it.

I know from personal experience that when I’m slogging away at tasks, working hard and putting in long hours, I become drained and anything creative that I’m working on becomes bland and boring.

Usually I keep my focus fresh by changing up tasks during the work day. When I’m at the 9-5 job, I switch between emails, phone calls, error correction work queues and spreadsheets. You all know as well as I do that spending a full day on any one of those tasks will cross your eyes.

When I’m at home, I try to mix up tasks also. Start a load of laundry, vacuum one room, clean a toilet, change the laundry, feed the dogs, vacuum a second room, you get the picture.

A trick I learned when the kids were home and I wanted them to help was to use a timer. The oven had a timer that would count down minutes and buzz when time was up. This was a way for us to get some work done, then play a bit. Kids (and adults) like to be rewarded for their efforts.

I would set the timer for 45 minutes and we’d clean like crazy people. At the buzz, I’d reset it for 15 minutes and we’d do whatever fun thing we wanted.

Sometimes one of us would be on such a roll with our 45 minute tasks that we’d even work through the 15 minute play time. That was usually me and not so often one of the kids!

Taking a break from mundane or hateful tasks (scrubbing the bathtub, anyone? Really – I’ll pay you!) makes the job a tad less miserable.

This coffee bread is a treat you can mix up on one of your 15 minute breaks. While it’s baking, you do your 45 minutes of dishes and laundry changing. Then you get to snack on the bread in your next 15 minute break!

Ingredients

  • 2.5cupsflour
  • 2tspbaking powder
  • ½tspbaking soda
  • 1cupsugar
  • 2large eggs
  • ¼cupbuttermelted
  • 1cuptriple strength brewed coffee

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Brew a small pot of coffee, using triple the amount of coffee grounds that you normally would.

  3. In large bowl, combine dry ingredients.

  4. In medium bowl, beat eggs fluffy. Add butter and coffee.

  5. Combine the wet ingredients to the dry ingredients and stir until just blended.

  6. Place batter into greased loaf pan.

  7. Bake at 350 degrees for 40-45 minutes, until toothpick comes clean.

Recipe Notes

Note: I used an espresso maker to brew my coffee for this recipe. I used the strongest brew setting.

If you are using a drip coffee maker, I suggest using triple the amount of coffee grounds that you usually do.

If you are using instant coffee, again using triple the amount of coffee that you normally would to make a cup of coffee. This might be the simplest method: 3 teaspoons of instant coffee combined with 1 cup boiling water.
