For the Marmalade Pudding Cake can I use ginger conserve instead of marmalade? Can ginger conserve be used in cake batter when making a ginger loaf cake, for example, instead of stem ginger which is expensive.

Nigella's Marmalade Pudding Cake (from KITCHEN) is an orange-flavoured sponge that is made with a combination of marmalade and fresh orange. As orange and ginger go well together we suspect you could use ginger conserve (jam) instead and maybe also add a touch of ground ginger to the sponge. However we would mention that we have not tried the recipe with this substitution and it becomes a ginger pudding cake rather than a marmalade one.
It is difficult to recommend ginger conserve as a general substitute for stem ginger as stem ginger has fairly large pieces of ginger that are preserved in a sugar syrup. Usually it is the pieces of ginger that are used, sliced or chopped, rather than the syrup. You may find that crystallized ginger is a more ready substitute for stem ginger.
