Pickle, also called as 'achaar', is a popular accompaniment in Indian cuisine and there's no denying it. It can liven up any boring meal in just a matter of minutes with its tangy and fiery taste. Be it dal chawal, khichdi or just a basic paratha or mathri, it can be paired with anything and is sure to tantalise the taste buds. Hence, you will find at least one dedicated jar of 'achaar' placed in every kitchen pantry. However, have you ever wondered why pickles go bad in spite of proper fermentation? 1. Use Wide-Mouthed Containers

Pickles are generally prepared in bulk. Hence, you must opt for a large, wide-mouthed container. Secondly, the quantity of the pickle should always be equivalent to the capacity of the container. While filling the pickle in the container, make sure it is filled to the top to remove air present in the jar. Besides, wide-mouthed jars also provide easy access to the jar of pickle wherein you can select your favourite part from the entire container of the pickle.


2. Don't Use Metal Lids And Spoons

While choosing the containers, make sure the lid of the container should not be metal-based. When vinegar-based pickles come in contact with metal, the metal will corrode and can affect the flavours of the pickle. Besides, make sure you are not taking out the pickle from the metal-based spoon. Always, choose a clean and dry wooden spoon to take out the pickle from the jar.

3. Sterilise The Jars

To sterilise the container, all you need to do is dip it into warm water and leave it for 10-12 minutes. Once done, take the container out; put it upside down on a wooden plank for a few minutes. After that, lay the container on its side in the oven at 100 degrees for about 10-12 minutes. Your containers are sterilised now. Please note: Always sterilise the containers on the day you are going to use them. Do not sterilise them a day prior.

4. Storage

Storing the pickles in a damp and humid place can affect the taste and flavour quotient. Look for a place that is cool and dry, it will help in increasing the shelf life of pickles.
