Do I need to store your wax covered cheese in a fridge? Yes and you must always store the cheese long term in a fridge for extended periods of storage of more than a few days we recommend storage in fridge at 5°C to 8°C. Blue cheese should always be refrigerated at below 5°C or it can be frozen.

How long should I keep cheese out of the fridge? ›

The type of cheese is the biggest consideration - hard cheese will last longer and is less likely to pose a health risk, while soft and fresh cheeses should remain refrigerated and only be left out for two hours at most. Properly stored butter can be frozen for up to four months if frozen prior to the USE BY date on the package. Why add lipase to cheese? ›

Bacterial lipases are believed to be at least in part responsible for more rapid flavor development in raw milk Cheddar cheese as compared to Cheddar cheese made from identical milk after pasteurization.

However, consumers can remove the original wrapper and re-wrap the cheese with plastic wrap, placing the wrapped cheese inside an airtight bag in the refrigerator. This will provide the best assurance of quality.
