If you’re familiar with Dave Ramsey you know that he loves to eliminate debt and he is famous for telling people that they need to cut their budget and live off of “beans and rice and rice and beans!” Yes, beans and rice are very inexpensive but I actually really love beans and rice and so do my kids. They love going to Mexican restaurants and stirring the rice and the beans together and gulping them down. But really why go to a restaurant when you can make them at home for a fraction of the price?
ThisDave Ramsey Slow Cooker Beans and Rice Recipe starts with dried pinto beans. I have learned that the best way to get dried beans to get to the perfect consistency is to soak them overnight in salty water. I put 2 cups of beans, 6 cups of water and 1 tablespoon of salt together in a large bowl and let them soak for 8 hours or more. Then the next morning I drained off the water and rinsed the beans and added them to the slow cooker with 4 cups of water. I like to cook my beans naked with no seasonings and then when they come to the desired consistency I drain off extra water and add in seasonings. With these beans I just added some garlic powder, tomato sauce, cumin and salt. I garnished the beans with snipped cilantro and served over white rice (we usually eat brown rice but I let the kids have their way for once). So yummy! I didn’t even miss the meat.
For this recipe I used my beloved 6 quart oval KitchenAid slow cooker. I love this slow cooker because it cooks evenly and low. I also love this slow cooker because it has a neat timer with satisfying beeping buttons as well as a medium setting for those days where you start your slow cooker at an in-between time. 1 tsp garlic powder
2 (8 oz) cans tomato sauce
1 tsp cumin
1/2 to 1 tsp salt (I like to use kosher salt)
Hot cooked rice
Instructions
Sort through and rinse off the beans. Place them in a large bowl. Cover with 6 cups of water and sprinkle with 1 Tbsp salt. Soak at least 8 hours.
Drain the beans and rinse. Add the beans to the slow cooker. Add in 4 cups of water.
Cover and cook on LOW for 8-12 hours or on HIGH for 6-8 hours, or until beans reach desired consistency. Drain off any excess water.
Add in garlic powder, tomato sauce, cumin and salt. Stir.
Since most slow cookers do not reach the boiling point (212°F), beans prepared in them without soaking and cooking them first will carry the toxic lectin. (And no need to worry about canned beans; they've already been prepared properly.)
Dave Ramsey - I've always used the metaphor of a beans and rice food budget. That means to cut costs and keep track of what you're spending in this major category. Some attention and intentionality goes a LONG way toward freeing up money to make HUGE progress toward paying off debt.
Cook on low for 6 to 8 hours: Cover the pot and cook on low for 6 to 8 hours. If this is your first time cooking beans or you're cooking an unfamiliar kind of bean, begin checking the beans after 5 hours and then every 30 minutes until they are cooked to your liking. Beans generally finish cooking in 6 to 8 hours.
Kidney beans contain a natural toxin called phytohemagglutinin, which can cause nausea, vomiting, and diarrhea if not cooked properly. Soaking the beans in water and boiling them for at least 10 minutes before slow cooking can help to reduce the toxin content and make them safe to eat.
Both methods were ranked as easy, however, considering the amount of cook time required for slow cooker beans, the Instant Pot method comes out on top. The stovetop and oven methods result in beans that were unevenly cooked– some had hard spots while others were mushy.

Is it safe to leave a slow cooker on for 12 hours? Yes, you can use your slow cooker for longer than eight hours, as long as you keep an eye on it. Many slow cookers do have an automatic shutoff after 24 hours.
The difference between the two settings isn't a higher temperature, it's the time it takes for the slow cooker to reach the simmer point. On high, that's around three to four hours, and on low, it's seven to eight, according to Crock-Pot. So imagine if your dinner is cooking away on high all day while you're at work.
Start the pinto beans in the morning, and they'll be ready by dinner. If you are comfortable leaving your slow cooker plugged in, you can even cook them overnight.
Put 2 cups dried beans into the slow cooker crock and soak overnight in cold water, enough to cover by several inches. The next day, drain the beans and discard the cooking water. Put soaked beans back into the slow cooker and add enough water to cover beans by 2 inches.
Canned beans are cooked and packaged in liquid, so they are also low in lectins. However, raw beans simmered at low heat such as in a slow-cooker or undercooking the beans will not remove all the lectins. The body can produce enzymes during digestion that degrades some lectins.
