Last night, I had a dream I was running a marathon. I woke up seriously stressed out. It was actually only a half marathon and I think I only ran two miles of it before quitting (I got lost… obviously), but it kind of threw off my whole day. Is my subconscious trying to tell me something?? Should I start training for a race?? Or should I avoid working out at all costs? Maybe it’s some kind of metaphor and I’m feeling lost and am struggling with making it through this marathon called life?? Yikes. I should probably just get into bed and eat bonbons.

It’s really not cool that the holidays are so close to arriving (and departing!) because I have not even come close to getting my fill of peppermint for the season. That’s why I had to involve peppermint in my homemade “bonbons.” And the candy cane candy melts Wilton sent me were the perfect ingredient! While at first I thought the combination may be a bit strange, I decided to make a Coconut Candy Cane Truffle. Not strange at all… It’s my new holiday go-to flavor combo!

COCONUT CANDY CANE TRUFFLES RECIPE

These coconut candy cane truffles are super duper easy to make. And also super duper easy to eat. Which can either be problematic or totally awesome. They're unique enough that you'll be the only one bringing them to your holiday party; but they're also totally festive and fun. Did I mention they're easy?? Truffles are one of the simplest treats to make and people are always so impressed by them.

First of all, I think I have a serious candy melts obsession. I get seriously anxious thinking about the new flavors that could be coming out and the desserts I can make with them (hint: when all else fails, make popcorn!). Candy Cane candy melts are one of my dreams come true! But if you can't find them, don't worry! You can make these candy cane truffles with vanilla candy melts or white chocolate with a little bit of peppermint extract added.

One of my favorite things about these truffles is that they have TRIPLE the coconut. Yup, the filling is made with shredded coconut, coconut oil, and coconut milk. There's also some vanilla extract and salt in there.

It all gets stirred together and then rolled into little balls. The coconut balls need to go into the fridge for about 20 minutes so they can harden a bit, making them easier to coat in chocolate/candy melts.

The next step is to melt the candy melts. I recommend using 50% power on your microwave and starting with a minute. Take the melts out and stir them. And then continue heating at 50% power for 30 second increments, stirring each time, until they're completely melted.

If you're using vanilla candy melts or white chocolate, you can do the same exact thing; just be sure to stir a little peppermint extract in once they're melted.

Oh, make sure your candy canes are crushed, too. Crushing candy canes is one of my least favorite jobs in the world, but I typically do it by putting candy canes in a plastic bag and whacking with a mallet. Sometimes I splurge and buy already crushed candy canes(affiliate link), but this is a luxury I cannot always afford.

Then it's time to coat the coconut balls in the candy melts. It's easy to just place them in the bowl and use a fork to roll them around and make sure they're totally coated. Then you can use a fork to remove them from the bowl and place them back on the parchment-lined baking sheet.

Sprinkle with some crushed candy canes… quickly because the candy melts will harden fast.

Told ya this was easy. Once the candy melts harden, you have the all-clear to start indulging.

I’d tell you that these coconut candy cane truffles are perfect for bringing to a holiday party… But I don’t even know if I should encourage you to share them. Because it’s the holiday season and you deserve to give yourself a little gift. I obviously gave myself one… Which is probably why I’m now having nightmares about running marathons.

But if you are willing to share, these truffles do make the perfect edible holiday gift! Simply place them in a nice little candy box and share them with family, friends, neighbors, teachers, mail people, etc. Everyone will love you forever.

Not that they don't already.

I was really, really intrigued by this flavor combination and had to test it out a few times. Coconut and peppermint? You need to try it and I promise you won’t regret it.

Because these truffles had THREE types of coconut flavors in them, they definitely had an in-your-face coconut taste. And the filling was incredibly creamy and delicious. The candy cane candy melt coating definitely had that cooling affect you expect from peppermint and it complemented the sweetness of the coconut so well.

Yes, these were ridiculously sweet. But I’m not complaining. Probably just don’t drink eggnog with these. Unless you want to. I would never judge you.

There are only a couple weeks to go before the holiday season is over and holiday treats like these coconut candy cane truffles disappear until next year! I say you should go ahead and take full advantage and worry about all those pesky marathons come January (or really, maybe wait until the weather gets warmer because running in the cold is no fun).

Ingredients

  • 2 cups shredded coconut
  • ÂĽ cup coconut oil (liquid)
  • ÂĽ cup light coconut milk
  • ½ tsp vanilla extract
  • Pinch salt
  • 10 oz. Wilton Candy Cane Candy Melts (see notes for alternatives)
  • 2 candy canes, crushed

Instructions

  • In a medium bowl, combine coconut, coconut oil, light coconut milk, vanilla extract, and salt.Stir all the ingredients together until well combined

  • Roll the mixture into golf ball-sized balls and place them on a parchment paper-lined baking sheet. Place in the fridge for about 20 minutes to let them harden a bit.

  • Place candy melts in a bowl and place in microwave. Heat at 50% power for about 1 minute. Remove from microwave and stir. Heat for another 30 seconds, remove from microwave and stir. Repeat until completely melted. If using vanilla candy melts or white chocolate, melt using the same process and then stir in peppermint extract.

  • Place coconut balls into the bowl with the candy melts and using a fork, roll around to completely coat. Remove with a fork and place balls back on the parchment paper-lined baking sheet.

  • Sprinkle crushed candy canes over the top (work quickly to sprinkle on candy canes before candy melts harden).

Notes

  • If you can't find Candy Cane candy melts, you can use vanilla candy melts with ÂĽ tsp peppermint extract added. Alternatively, you can use white chocolate with ÂĽ tsp peppermint extract added.
