This salad is technically closer to a cold pasta dish, but that might be the reason behind why it’s so good.

After all, it’s really just pasta (I find farfalle to be a scrumptious choice for this recipe, but any short-cut pasta will do) and homemade tomato pesto!

The pesto is easy to make as well. Just combine sun-dried tomatoes, garlic, nutritional yeast, basil, pine nuts, lemon juice, salt, pepper, chili flakes, and olive oil in a food processor, blend – and you’re done!

This recipe is accidentally vegan as well, and while it won’t be once you serve it with roast beef, it can make for a great standalone treat.

Caesar salad is also a perennial favorite. I mean: who doesn’t love a salad that contains bread, cheese, and bacon? It’s simple and super delicious, especially if you get the dressing right.

This recipe calls for mayo, garlic, anchovy filets, lemon juice, dijon mustard, Worcestershire sauce, parmesan cheese, salt, pepper, and a little milk in the dressing. Trust me – the entire ensemble is just perfect!

Since you’re prepping a savory, meaty dish like roast beef in the first place, why not pair it with a delightfully refreshing and light side like coleslaw?

This is one of my favorites because I can pair coleslaw with literally anything!

Using only shredded cabbage, carrots, mayo, honey, and vinegar, this super simple salad is ready in just five minutes. Experiment with the recipe to get that perfect tangy slaw everyone will adore.

Make sure to refrigerate it for at least an hour before serving if you can — it’s best while its cold and crispy!

24. Grilled Asparagus

If you’re lucky enough to have fresh asparagus in season near you, take advantage and make some simple grilled asparagus with your roast!

One of the things I love about this recipe is that it doesn’t take much to whip up at all. All you need is a hefty serving of asparagus spears, a little virgin olive oil, and balsamic vinegar. Then, you’re all set!

This recipe can be made in a grill pan as well if you don’t have a grill (or simply don’t want to fire it up).

It’s a 20-minute recipe including marinating time, so you’ll have the most flavorful, tender asparagus in short order!

25. Summer Fruit Salad with Honey Lemon Dressing

This vibrant fruit salad is a summer favorite, and it’s ideal when paired with roast beef as the sweet freshness contrasts beautifully with the hearty meaty flavors.

However, I’d recommend serving it on a side plate or bowl to avoid meat juice in your mangos!

Aside from the mangos, this salad needs grapes, strawberries, pineapple, blueberries, and kiwi, gently tossed together with some honey and lemon juice.

If you’re looking to mix things up and have some extra time, you can use a cookie cutter or other tool to cut the fruit into fun shapes!

This recipe can be made ahead of time and is good in the fridge for up to five days. I also like freezing any awkward leftovers as quick smoothie add-ins!

Desserts

26. Dark Chocolate Mousse

Roast beef is a luxurious and decadent meal, so you should follow it up with an equally exquisite dessert!

This dark chocolate mousse definitely takes the (…mousse?) cake — it’s sophisticated, rich, and delicious!

Mousse can be a little more complex to make than other desserts.

You’ll need to melt the chocolate into espresso powder, water, and a little sugar on a double boiler, separate your eggs carefully into different bowls, then combine the egg yolks with sugar, salt, and vanilla, and into the chocolate.

As for the whites, whip them with sugar until they form stiff peaks, and then carefully fold them into the other mixture.

While it’s a little more involved as a process, the texture and intense flavor of the resulting mousse make it all worth it!

For extra presentation points, top with a generous dollop of whipped cream or chocolate shavings. If you’re feeling extra decadent, add strawberries or raspberries as well. I enjoy serving this dessert with coffee or after-dinner co*cktails!

27. Salted Caramel Sticky Toffee Pudding

If you’re looking to keep things traditional while still enjoying an amazingly luxurious dessert, this toffee pudding is the way to go! It’s super fluffy, satisfying, and warming.

This upgraded version of the classic dessert adds homemade sea-salt caramel sauce. While you do need to keep an eye on caramel as it cooks ( it does get very hot), it’s still pretty easy to make yourself!

For the perfect pudding, only pour half of the sauce over the cake when it comes out of the oven. Reserve the other half for topping over the cake when you serve it!

If you want something extra, you can never go wrong with a scoop of vanilla bean ice cream alongside this cake. Personally, I usually serve it with a humble cup of tea!
